Instead of using dairy farms, Ripple makes its milk from peas, using a process that strips an almost pure protein from the vegetable. After the protein is blended with fat and sugar, the result is a creamy liquid that's designed to avoid the texture and flavor problems of some dairy alternatives--and can appeal to non-vegans in the mass market. After launching its line of pea milk, the company began selling a pea-based version of half-and-half, and a Greek yogurt alternative. The products have as much protein as the dairy versions, less sugar and fat, and more calcium and vitamin D. Drinking pea milk is also better for the environment: By avoiding the need to raise cows, the products have only a quarter of the greenhouse gas emissions of dairy.
