“Which dish is that…?”

If you get caught saying that to your customers you might as well kiss your tips, and possibly your job,  good bye. Granted, there are certain situations where you might have to ask someone to repeat what dish they want, but there is no reason for anyone on the staff to not know a menu item. This even includes a host or hostess.

If a patron calls to make a reservation and wants to know if there are any Vegan items on the menu they should be able to give them an answer. Also if there are any dishes in your restaurant that can be considered “Signature Dishes” you should be able to describe the dish in detail.

This can help any waiter out especially if a customer asks “What do you recomend?”. If you give an elaborate description of the preparations and contents of the dish customers will be more willing to order the items you suggest. Enjoying the food you recomend = 20%.
